{"id":1114,"date":"2016-04-21T15:35:54","date_gmt":"2016-04-21T13:35:54","guid":{"rendered":"https:\/\/alinor.it\/es\/vegetariano-o-vegano\/"},"modified":"2017-10-06T19:09:09","modified_gmt":"2017-10-06T17:09:09","slug":"vegetariano-o-vegano","status":"publish","type":"post","link":"https:\/\/alinor.it\/es\/vegetariano-o-vegano\/","title":{"rendered":"Vegetariano o vegano?"},"content":{"rendered":"<div class=\"page\" title=\"Page 1\">\n<div class=\"layoutArea\">\n<div class=\"column\">\n<p>La alimentaci\u00f3n vegetariana en general es un modelo alimentario que excluye todos los tipos de carne animal, de tierra (bovina, porcina, ovina, salvaje), de aire (poller\u00eda, otras aves de corral y salvajes), de mar (peces y mam\u00edferos acu\u00e1ticos, moluscos, crust\u00e1ceos) y todos los productos de transformaci\u00f3n industrial derivados de estos (como, por ejemplo, embutidos o pat\u00e9).<\/p>\n<figure><img decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/alinor.it\/wp-content\/uploads\/2016\/04\/lamb-451982_1280-1024x682.jpg\" alt=\"lamb-451982_1280\" \/><\/figure>\n<p>En concreto, existen distintos tipos de vegetarianos:<\/p>\n<p>&#8211; los ovolactovegetarianos que no comen carne ni pescado, pero consumen leche, l\u00e1cteos y huevos; en el caso en el que se excluya tambi\u00e9n el consumo de uno de estos \u00faltimos alimentos, por motivos personales o de intolerancia o alergias, se habla de lactovegetarianos (consumen l\u00e1cteos, pero excluyen el uso de huevos) o de ovovegetarianos (excluyen los l\u00e1cteos)<b>;<\/b><\/p>\n<p>&#8211; y los veganos, es decir, los vegetarianos que excluyen de su alimentaci\u00f3n tambi\u00e9n todos los productos indirectos del animal, es decir, leche, huevos e incluso miel.<\/p>\n<p>Existe en realidad otra categor\u00eda de personas que consumen de vez en cuando carne blanca y pescado: cuando estos alimentos se consumen con una frecuencia inferior a 1 vez por semana, algunos investigadores denominan a estos sujetos como semivegetarianos.<\/p>\n<p>Si por un lado dichos modelos alimentarios se caracterizan por algunas limitaciones, por otro lado se consumen y valoran alimentos que muchos omn\u00edvoros no consume<b>n<\/b> habitualmente: los cereales integrales, las legumbres (incluidos tambi\u00e9n los productos que derivan de estos: bebidas de soja, tofu, tempeh&#8230;), verdura, fruta fresca, grasas (aceites, semillas y frutos secos oleaginosos).<\/p>\n<figure><img decoding=\"async\" class=\"aligncenter\" src=\"https:\/\/alinor.it\/wp-content\/uploads\/2016\/04\/slice-the-tofu-597229_1280-1024x682.jpg\" alt=\"slice-the-tofu-597229_1280\" \/><\/figure>\n<p>En 2009 la Asociaci\u00f3n Diet\u00e9tica Americana, se ha expresado oficialmente sobre dicho reg\u00edmenes, y posteriormente ha confirmado dicha postura:<\/p>\n<p><i>\u00ablas dietas vegetarianas tienden a tener un contenido de grasas saturadas y de colesterol reducido, y cantidades m\u00e1s elevadas de fibra, magnesio, potasio, vitamina C, folatos, carotenoides, flavonoides y otros fitocomponentes.<\/i><\/p>\n<p><i>Estas diferencias en la composici\u00f3n nutricional pueden explicar algunos de los beneficios saludables en los individuos que siguen una alimentaci\u00f3n vegetariana <\/i><b><i>variada<\/i><\/b><i> y <\/i><b><i>equilibrada<\/i><\/b><i>.<\/i><\/p>\n<p><i>Sin embargo, veganos y otros tipos de vegetarianos, pueden presentar consumos reducidos de <\/i><i>vitamina B12, calcio, vitamina D<\/i><i>,<\/i><i> zinc<\/i><i> y \u00e1cidos grasos<\/i><i> omega 3<\/i><i> de cadena larga\u00bb.<\/i><\/p>\n<p>Una curiosidad: Pit\u00e1goras es el fundador del movimiento vegetariano; antes de acu\u00f1ar el t\u00e9rmino \u00abvegetariano\u00bb (siglo XIX), los que prefer\u00eda<b>n<\/b> una dieta sin carne, en general se denominaba<b>n<\/b> \u00abpitag\u00f3rico<b>s<\/b>\u00bb.<\/p>\n<p>&nbsp;<\/p>\n<p><strong><i>Dra.
